Easy Summer Squash Recipe
Do you ever feel like veggies are boring? I feel like I do the same thing with my veggies every meal... and that gets old! I decided to grow yellow squash this summer and realized I needed to find some fun new recipes to mix up the veggie routine. I found this new recipe that is super easy and delicious!
I started with picking a yellow squash from the garden (grocery squash is just as good!), rinsing and slicing. The next step was getting out my three simple ingredients: parmesan cheese, ground pepper, and garlic salt.
First, I placed the slices on a baking sheet. You can line the sheet with THIS easy parchment paper, which is the preferred method (not shown in picture). I then evenly distributed the pepper and garlic salt. Lastly, I placed a spoonful of parmesan cheese on the surface of each slice and smoothed it out as shown in the picture below.
After I pre heated the oven at 425, I threw them in on the center rack for about 20 minutes until I saw the parmesan cheese bubbling and turning golden brown.
I then served them with some parmesan sprinkled broccoli and they were delicious!
Ingredients:
Yellow Squash
Pepper
Garlic Salt
Parmesan

Baking Sheet
Parchment Paper
Instructions:
Pre heat your oven to 425°F and line your Baking sheet with parchment paper
Wash and dry squash, then cut squash into similar sized slices. Place them on the baking sheet and sprinkle pepper and garlic salt on each slice. Get a spoon and smooth out parmesan cheese over each slice of squash.
Place the squash on the center rack for about 18-20 minutes or until golden brown. Then enjoy your delicious squash!
